Ingredients:
- 2 3/4 cups all purpose flour
- 2 1/2 tsp active dry yeast
- 2 tbsp sugar
- 1 1/2 tsp salt
- 1 cup milk
- 1/4 cup water
- 3 tbsp butter
- 1 egg
- Using the scoop and level method, measure out your flour and put it into your stand mixer.
- Add to your flour, the yeast, sugar and salt and give a mix to combine all your ingredients.
- In a saucepan add milk, water and butter. Keep this at a low heat and take it off once your butter is melted. We don’t want this hot. If it’s too warm to put your finger in, wait until it cools a minute.
- Slowly add the wet ingredients to the dry ingredients and mix. (It’s going to be a very sticky dough).
- Add 1 egg and mix again.
- Once mixed, add your dough to a well oiled bowl and cover with plastic wrap and a towel.
- Let your dough rest for 1 hour.
- Place your dough onto a well floured surface and sprinkle flour over the top of the dough. Fold over the dough a few times.
- Roll the dough out using your rolling pin.
- Sprinkle corn meal onto a baking sheet. One by one, cut out your muffins. I used a canning lid but if you have a cutter you can use that as well. Cut right down, and do not turn.
- Place the cut out dough onto the corn meal and sprinkle a little more corn meal on top. Cover and let rest 30 minutes.
- Heat a pan to medium-high or an electric griddle to 300 degrees. Cook each side of the dough for about 5 minutes until they are lightly brown on each side.
- Remove from the pan, let cool, and enjoy!
